12 day carbonic maceration. Aged in neutral French oak for 8 months.

Carbonic maceration yields a very fruity and textured wine that is extremely aromatic in the glass, with notes of dried mango, firm apricot and lemongrass. This wine is complex, and would pair nicely with anything from khao soi to tacos.
