Pinot Gris, Pinot Noir, Pinot Blanc

The base of this Piquette is sourced from the 2022 'Do Nothing' blend - a mix of wholecluster Pinot Gris, Pinot Noir, and Pinot Blanc that fermented carbonically. The grapes were pressed before dryness and the pomace was rehydrated with water to macerate for 10 days before adding fermenting Riesling juice for added acidity and aromatics. The mix was chaptalized with vegan beet sugar and bottled to create natural carbonation, without any fining or filtration. 7% abv.
