"We find that bittersweet apples make for a richer, more textured cider. The Dabinett in this blend brings that character, and the tart acidity of the Rhode Island Greening balances it perfectly. It was natively fermented and aged in old French Oak and Chestnut barrels for 10 months before being can conditioned to add bubbles."
Todd and Crystal are lifetime New Yorkers, having been born in central New York and spending most of their adult lives in Brooklyn. After finding the farmhouse of their dreams on a former perennial nursery in the upstate New York town of Pine Bush, they gradually shifted to a full-time farming mode. The word Farm plays a proud and important role in the winery’s name—they pursue a holistic regenerative approach, growing their own vegetables and fruits.
