The 25 year old vines are situated in Molosmes, on the border with Champagne giving it a Champenois climate with Burgundian terroir.
Clay-limestone soils from a single .6 hectare parcel. Yields are very low, around 40 HL/HA (half the allowed amount). The wine is aged one year in stainless steel tank and then on the lees for 16 months (minimum is 9 months for Cremant, 15 months for Champagne). There a light dosage, between 4 and 5 g/L.
