The Montepulciano undergoes carbonic maceration. The Gewurztraminer and Pinot Gris are skin fermented for two weeks. The Syrah and Mourvedre are co-fermented and then aged in neutral oak for seven months. Afterward, it is infused with steam-distilled organic Rose Geranium hydrosol and bottled with a Champagne starter to add effervescence.
