Ancestral Rosé 2019
Macabeu, Xarel-lo, Cabernet Sauvignon
Brisk bubbles from organic grapes grown in the southwestern Spain. The only organic winery (now converting to biodynamic) in the whole Extremadura region. This rosé is a blend of both red and white grapes, made with a single fermentation finishing in the bottle for the bubbles. The wine is disgorged (the yeasty sediment collected in the neck, shilled and removed as a plug), a common producer for both champagne and pet-nat style sparklers. Great tart raspberry aromas and stony minerality. Wild yeast fermentation, no fining, clarity achieved via disgorgement but no filtering.
