100% Chardonnay

Bright and fruity, with juicy apple, white floral, and a hint of salinity.

All grapes were pressed hard and long, settled overnight, and then fermented in neutral French oak barrels and poly tote. The wine was bottled in December 2021 before primary fermentation was complete (like all pet nats) to capture the naturally occurring CO2 in the bottle. The wine is left un-disgorged, as we hope that some of the lees that give chardonnay much of its character, land in the glass.
