Macabeu and Xarel-lo

Owing its name to Plato’s theory of the Soul of the Earth, Anima Mundi is winemaker Agustí Torello Roca’s project to reveal the soul of the Penedes region of Spain in a bottle. In this case, the result is a delicious sparkling blend of Macabeu and Xarel-lo made in the Ancestral Style in which fermentation is completed in the bottle. Cami dels Xops is crisp with fizzy bubbles, and has notes of green apple, meyer lemon, and a very subtle hint of brioche. Pairs very well with oysters or really good sashimi.
