This petnat is a blend of 75% Parellada, 20% Macabeo, 5% Muscat of Alexandria from various plots he farms organically. The grapes are hand harvested, destemmed, carefully crushed and macerated with skins for 1 day in stainless steel tanks. Bottled at a density of 1002 and traditionally disgorged the following May. Unfined, unfiltered, and zero sulfur. Delicately aromatic, refreshing, and low abv, with incredibly foamy and persistent bubbles. Only 904 bottles produced.
